Nat's Chicken Stir-Fry

1. In a large skillet, add a few TB of olive oil or cooking oil. Add veggies. Definitely add chopped cabbage (it's the filler). I also like to add: carrots, broccolli, onions, peppers, beans.... Add some water so the veggies don't burn. Cook until veggies are done and cabbage is translucent.

2. Add cooked, shredded chicken. (I like to boil my chicken earlier in the day - so it is ready when I prepare dinner).

3. Add sauce: 2 cups water, 1/4 cup soy sauce, 2 TB corn starch. (I doubled the recipe the other night). Stir in sauce until it thickens.

4. Add cashews, water chestnuts, mandarin oranges and serve over rice.
