BBQ Chicken Salad with Cilantro Ranch Dressing

**This recipe is for 1 large serving, double accordingly**
(I quadrupled it when I made it for meal group)

3 Cups thinly sliced Green Leaf Lettuce
¼ Cup corn¼ Cup black beans
8 grape tomatoes, halved
1 cooked grilled chicken breast
¼ Cup favorite BBQ Sauce
¼ Cup shredded mozzarella cheese
¼ Cup prepared ranch dressing1 heaping Tablespoon fresh chopped cilantro leaves

1. Place lettuce into a salad bowl. Layer with corn, black beans and tomatoes. Dice cooked chicken breast and mix with BBQ sauce. Top over salad and sprinkle with mozzarella cheese.
2. Place ranch dressing and cilantro leaves into a small bowl to combine. Drizzle over salad and serve.



Homemade Rolls

2 c. milk1 c. sugar
1 c. oil (I use vegetable)
2 tsp. salt
2 eggs
2 pkgs (2 T.) yeast with 1 tsp. sugar
8 c. flour

Step 1- warm milk in microwave for 1 minute - add sugar, oil and salt to Bosch with the warmed milk
Step 2 - dissolve yeast in 1/2 c. warm water with the tsp. of sugar - set aside
Step 3 - add 2 c. flour to Bosch
Step 4 - beat in 2 eggs
Step 5 - add yeast mixture
Step 6 - mix in 3 c. flour
Step 7 - mix in 3 c. flourLet rise for 3 hours
Divide into 4 balls
Roll out into a pie shape and cut into long triangles.
Roll the dough from the widest to the narrowest
Let rise for 1 hour
Bake at 325 fro 15-20 minutes.
Brush with butter


Peanut Butter Whopper Sandwich Cookies

1 stick softened butter
½ Cup Peanut Butter
½ Cup sugar
½ Cup brown sugar
1 large egg
½ teaspoon vanilla
1 ¼ Cup flour
¾ teaspoon baking soda
½ teaspoon baking powder
¼ teaspoon salt
3.5 oz container Peanut Butter Whoppers, coarsely crushed ( found at Walmart)
sugar for rolling

1 container whipped vanilla frosting (or a homemade frosting of choice)
1 big handful of mini marshmallows, cut in half the long way

1. Preheat oven to 375 degrees F. In a stand or electric mixer, cream the butter, peanut butter, and sugars until creamy. Add egg and vanilla until well combined.
2. Place flour, baking soda, baking powder, and salt into a large bowl, stir to combine. Slowly add dry ingredients to wet ingredients on low speed, then add whoppers until just combined.
3. Scoop dough with a medium cookie scoop, roll into sugar then place onto a parchment or silpat lined baking sheet. Bake for 8-10 minutes, until cooked but still soft.
4. Stir the frosting and cut marshmallows in a medium bowl, spread between 2 cookies and Enjoy!
