Sweet Baby Ray's BBQ Chicken
1 bottle Sweet Baby Ray's Barbecue sauce (from Costco - use about 2 cups)
6 boneless, skinless chicken breasts
Marinate chicken in BBQ sauce for several hours. Grill over low heat, basting with extra sauce as desired.
Biscuits Supreme
3 c. flour
4 tsp. baking powder
1 Tbsp. sugar
1 tsp. salt
3/4 tsp. cream of tartar
3/4 c. butter
1 c. milk
Combine dry ingredients in a large bowl. Add butter, using a pastry blender to mix it until it resembles coarse crumbs. Add milk, stir just until moistened. Roll dough out on lightly floured surface, about 3/4" thick. Cut biscuits out using a small glass or cookie cutter. Place biscuits 1" apart on ungreased cookie sheet and bake at 450 for 10-12 minutes.
Strawberry Shortcake
1/4 c. sugar
2 c. flour
2 tsp. baking powder
1/2 c. butter
1 egg
2/3 c. milk
6 c. sliced strawberries
2 c. whipped cream
Combine dry ingredients in a large bowl. Add butter, using a pastry blender to mix it until it resembles coarse crumbs. Add egg and milk; stir just until moistened. Spread the dough in a greased 8" round baking pan. Bake at 450 for 15-18 minutes. Cool in pan 10 minutes. Top with cream and berries and serve.
